Carrot Sponge Cake

Special thanks to my sisterly friend Rose Alexander for sharing this super soft and yummy cake recipie with me.

All purpose plain flour-1 cup,
caster sugar -3/4 cup
egg-1
baking powder-1 teaspoon
salt-1 pinch
sunflower oil or any refined oil-1/3 cup
vanila essence-1 teaspoon
1 medium size grated carrot and almonds(optional)(take 1 table spoon of flour from the 1 cup and sprinkle it over the carrot and keep aside)

Preparation:
Preheat oven at 170 degrees
1.Mix all the ingredients together egg,sugar,flour,oil,baking powder,salt and vanilla essence.Mix it well with hand(no beater is necessary for this recipe)
2.If you need,you can add 2 table spoon of milk to make the batter for a pouring consistency
3.Add grated carrots into the mixture and mix it with a spatula.Make sure that you don’t over mix the batter
4.Grease the cake tin with a tea spoon of butter
4.Transfer the batter in a buttered cake tin for 40 to 45 minutes until the cake is baked well.
